Put pork in a pot with 4 cups of water. Place heat on number 7 and boil for about 40 minutes. You can remove all white fat with a spoon when meat starts to cook. When this is done empty water and pork from pot. We are going to use same pot. Now add 4 tablespoons of oil and the butter. Place pork and stir every two minutes and add half of lemon. We want the color to be golden but not burned. It takes about ten minutes but watch it.
Serve in a plate and add on top a sprinkle of regano. Use a piece of bread if you like to dip into the oil from the pork.
