In the pot add oil and place onions, garlic, leek (use the white part only), tomatoes. Cook for 6-7 minutes and add vinegaer. I used vinegear as I didnt have white whine. After that add water and cook for another 20 minutes. After that add rosmarino it should take another 15 min. I always turn off stove and leave food for another 10 minutes on the heat. Make sure you check the amount of water. Also, add the dry apricot. When this is almost ready to server sprinkle litle diil on top of food and more pepper if would like.
