Yiouvarlakia – Greek Meatball soup with Lemon

  1. First chop onions and garlic in very small pieces. Cut the dill and the parsley. In a bowl add the meat, the salt, the pepper, the dill, the parsley, half cup of rise the 2 tablespoons olive of oil, half chopped onion and the eggs. Mix with your hands for about 2 minutes.
    When this done put the bowl in the fridge for 10 minutes.
    In a pot add 2 cups of water and adjust heat on high. Add one tablespoon of oil, half garlic. When water is really hot lower heat on number 6. Now form the ground beef to any shape you like and put them in the pot. Cook for about 1 hour. Squeeze the lemon and put it in the pot. When this is done taste it as it might need more salt or pepper is up to you.
